  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: Shelf beside back handsink was observed in a state of disrepair and damaged.
    Correction: Shelf to be easily cleanable. This was mentioned on your last report and I was told it had been reported. It has been a year. Time to replace.

    Observation: Shelf beside back handsink is in poor repair.
    Correction: Manager stated this has been asked to be replaced.
  • Light Bulbs Protective Shielding
    Observation: Light bulbs above front prep line are not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb. Manager intends to replace bulbs with shatter resistant bulbs.

Time control policy being followed. PIC knew food borne illness symptoms. We reviewed the big 5 enteric diseases.

    Observation: No disposable towels were provided at the hand washing lavatory in the back.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

Note: dishmachine gauge indicates machine is operating at correct temperatures. Health Department tape did not turn solid black - Starbuck's tape (temperature dot) after several passes through machine - both tapes turned. Time control used on creamers.

    Observation: Observed food employee washed hands and did not lather out of water flow for 10-15 seconds.
    Correction: Correct by properly washing.
