1. PIC indicated the facility cooks burger from raw. EHS recommended obtaining a thin probed thermometer.
2. Ensure burger is cooked to an internal temperature of 155*F and reheated to an internal temperature of 165*F.
3. Foods for lunch were not finished being prepared prior to the end of the inspection.

Food was in process of being heated (ravioli) for lunch, but otherwise no food preparation was observed during today's inspection.

Recommend removing items from the kitchen that are no longer used.

No food preparation observed during today's inspection. Discussed hand washing and glove use. Cabinet re-surfacing is tentatively scheduled for Christmas Break and through the winter. If cabinets are painted, ensure a semi-gloss paint finish is used.
Observed proper storage of foods. Eggs are used for baking and for staff food, and are stored separately from items to be served to children.

1. Upcoming repairs to cabinetry expected. PIC inquired about allowable materials and suggestions for cabinet repairs. Contact the health department with additional questions.
2. Cooler had been open for awhile prior to inspection to put away a milk delivery. Ensure ambient air temperature inside cooler drops to between 36 and 38'F. Adjust thermostat if necessary.
  • Critical: Hands - Preventing Contamination from Hands* (corrected on site)
    Observation: Observed employee butter bread with bare hands. PIC obtained gloves from storage.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.

    Observation: Milk (44'F it) cold holding at improper temperatures in the reach in cooler. Ambient temperature of the cooler was lowered.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: Kitchen cabinets noted in need of repair and maintenance.
    Correction: Ensure equipment is maintained so it is easily cleaned.
