| Discussed the following items with the Person in Charge: 1. Cooling of chicken nuggets. Chicken nuggets were taken out of warmer at 167'F approximately 30 minutes to 1 hour prior to inspection. Nuggets have met first cooling parameter, but the tray was covered. Recommended to PIC to leave nuggets uncovered during cooling process. 2. Contact health department regarding status of the dish machine. 3. Facility is very clean and in good repair. Thank you!
