Discussed the following items with the Person in Charge: 1. PIC has held food safety certification in the past and was able to demonstrate knowledge pertaining to food safety. The certification has expired and PIC is scheduled to take another class. Please send a copy of updated certificate to the health department once certification renewal is complete. 2. Inspection conducted due to change of ownership. No food preparation was observed during today's inspection. 3. Facility overall observed to be clean and well maintained during today's inspection. Recommend developing a cleaning schedule and maintaining it. Facility is currently within substantial compliance with the Virginia Department of Health Food Regulations, therefore a permit to operate a food facility is issued. Ensure the permit is posted in a location where it can easily be seen by the public.
Critical: Package Integrity* (corrected on site) Observation: Food packages are not in good condition or the integrity of the package contents are not protected from adulteration or potential contaminants (ex: dented food cans). Observed dented cans of water chestnuts on the shelving units in dry storage that were not seperated from those available for sale or service to customers. Cans were stored with other items to be returned to the supplier.
Correction: Discard or return to distributor any food packages that are not in good condition or the integrity of the package contents are not protected from adulteration or potential contaminants.
Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site) Observation: Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit. Observed raw shell eggs stored above imitation crab meat and raw cabbage in the walk in cooler. PIC re-arranged foods so the eggs were below the ready to eat food items.
Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
Food Storage - Clean and Dry Location (corrected on site) Observation: Observed tempura batter stored uncovered in the dry storage room and egg rolls stored uncovered in the walk in cooler.
Correction: Cover food to protect it from potential contamination.
Equipment - Fixed Equipment, Spacing or Sealing Observation: The hand sink is no longer sealed to adjoining equipment or walls.
Correction: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.
Non-Food Contact Surfaces Observation: The nonfood contact surface of the spaces between the deep fryers are noted with an accumulation of grime and debris.
Correction: Clean the surfaces at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
