Conditions observed at this facility were found to be greatly improved from those at the previous inspection visit. Efforts toward improvement are very obvious and much appreciated. Thank you, and kudos to management and staff for accomplishing the turn-around.

Discussed issues of general unclean surfaces throughout kitchen, and the need for increased time dedicated to cleaning. Discussed need for more aggressive measures to eliminate rodent problem.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils*
    Observation: The inner surfaces of the ice maker, above the ice, were observed in an unclean condition.
    Correction: Equipment food contact surfaces shall be clean to sight and touch.
  • Critical: Equipment - Food Contact Surfaces and Utensils (corrected on site)
    Observation: The probe food thermometer was observed with dried food debris adhered to the probe surface when removed from its storage sleeve.
    Correction: The probe thermometer was washed, rinsed, and sanitized.
  • Non-Food Contact Surfaces
    Observation: Non-food contact surfaces of the table mounted can opener was observed with heavily encrusted food debris.
    Correction: Non-food contact surfaces of equipment must be cleaned at a frequency to preclude accumulation of residues.
  • Kitchenware and Tableware (corrected on site)
    Observation: Green plastic drinking cups were observed stored on a stainless shelf that was visibly soiled.
    Correction: The stainless shelf was washed, rinsed, and sanitized.
  • Pests - Controlling Pests*
    Observation: Mouse droppings were observed throughout the pantry, on top of packaged foods, with heavier droppings on the floor beneath the shelving
    Correction: The presence of rodents shall be controlled by routine inspections, covered bait stations, elimination of harborage conditions, and application of poisons by a certified applicator.

    Observation: The Person-in-charge stated that the tracking powder was applied by in-house maintenance personnel.
    Correction: Restricted use pesticides shall only be applied by a certified pesticide applicator.
  • Critical: Tracking Powders - Pesticides*
    Observation: Tracking powder was observed along edge of floor in the pantry.
    Correction: Tracking powder pesticides are not to be used in this facility.

This cursory inspection was prompted by a request to complete a form for Department of Social Services.
  • Warewashing Machines, Manufacturers' Operating Instructions (corrected on site)
    Observation: After four complete wash/ rinse cycles the water temperature at the warewash machine was reaching a maximum temperature of 120°F. The manufacturer's specification plate indicated that a minimum temperature of 125°F is required.
    Correction: House maintenance adjusted the water heater temperature. At last check the machine's water temperature reached 130°F.
  • Critical: Plumbing System Maintained in Good Repair (corrected on site)
    Observation: While water was being run into the food preparation sink, a sewage backup was observed on the floor directly under that sink.
    Correction: House maintenance worked on the drain until it was open and allowing a free flow of water.
