    Observation: The hand sink near the swinging door was observed draining slowly.
    Correction: All plumbing must be maintained in good repair.
  • Light Bulbs Protective Shielding
    Observation: Five overhead fluorescent light fixtures in the kitchen were observed without shielding
    Correction: Bulbs above exposed foods must be coated or shielded.

    Correction: The ice scoop was placed in proper storing position.

    Observation: The hand sink was observed draining poorly/ slowly.
    Correction: The poor drainage was corrected.

Vacuum sealed clams remain frozen until removed from freezer at time of customer order. This is excellent practice for frozen, vacuum sealed seafoods, and is indicative of the food safety awareness found among management and food staff at this restaurant. Great job, Gino!

    Observation: Meatballs in hot hold unit were temp'd at 125°F.
    Correction: Hot hold unit temperature was adjusted up and meatballs were immediately reheated to 185°F before being returned to hot hold.

    Observation: A food staff employee was observed eating during food preparation process (pizza batter make).
    Correction: The employee was immediately instructed by the Person In Charge concerning this violation. The employee was also sent to wash their hands.

    Observation: The ice scoop was observed stored on the top of the ice making machine, a soiled, dusty surface.
    Correction: The responsible employee was immediately instructed by the Person In Charge concerning proper storage of an ice scoop. The scoop was taken to the warewash to be washed and sanitized.

This restaurant is very well managed, non-food and food contact surfaces observed to be well maintained and in very clean condition (example: a two year old meat slicer used on daily basis was observed to be in like-new cleanliness).
