Please assure that ware wash staff are trained in the proper use of the 3 bay sink sanitizing procedure, and that the heat sanitizing Hobart ware wash unit is allowed to reach operating temperatures before using.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Juices (apple and orange) from the juice dispensing machine were observed at temperatures above the maximum regulatory temperature for these foods.
    Correction: Please see that the juice machine is repaired or replaced.

    Observation: A student was observed lying an ice cream scoop handle on ice cream at a self serve ice cream bar. Other ice cream scoops at this self serve bar were observed sitting in still water, unreplenished water.
    Correction: Suggest placing a sign at the ice cream bar reminding students to replace the ice cream scoop in the rinse water container. Running water was provided for the in-use ice cream scoops.
  • Sanitizing Solutions, Testing Devices
    Observation: The facility provided sanitizer test strips would not indicate a ppm reading for quaternary ammonia at the 3 bay sink.
    Correction: This facility will replace the sanitary test strips at the 3 bay sink.
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (corrected on site)
    Observation: The heat sanitizing rinse temperature was observed reaching a temperature of 202 degrees.
    Correction: The maximum temperature obtained by this machine should be 194. The temperature was adjusted and a final temperature check was found to be 190.
  • Toilet Room Receptacle Covered
    Observation: A lidded waste receptacle was not provided in the employee restroom.
    Correction: A lidded waste receptacle will be placed in the employee restroom.
  • Handwashing Signage/Handwashing Facilities
    Observation: An employee handwash sign was not observed posted in the employee restroom.
    Correction: All handwash sinks must have handwash signage posted.
