This kitchen was found to be very clean, well organized, and very well managed. Great job.
  • Light Bulbs Protective Shielding
    Observation: 4 fluorescent light tubes in a ceiling fixture near the refrigerator and freezer were observed with a plastic shield missing from the fixture.
    Correction: All lighting above exposed foods must be shielded, coated,or shatter-resistant.

Discussed proper use of quaternary solution, and maintaining open floor spaces for proper cleaning.
  • Food Storage - Clean and Dry Location (corrected on site)
    Observation: Cartons of canned soft drinks were observed sitting on the floor of the pantry.
    Correction: Foods must be stored at least 6" above the floor. This is for protection of the food, as well as being able to properly clean the floor.
  • Sanitizing Solutions, Testing Devices
    Observation: The test strips provided for testing the quaternary ppm concentration was not giving a proper concentration reading.
    Correction: A test kit for accurate measurement of the quaternary sanitizing solution concentration must be readily available for use.
  • Physical Facilities in Good Repair
    Observation: The McCall 2-door reach-in refrigerator was observed dripping condensate to extent that a stainless pan is being used to collect the dripping.
    Correction: Refrigeration equipment is included among physical facilities and must be maintained in good repair.
