Correction: Discontinue the reuse of single-use containers for cooked foods products storage. Provide approved reusable food storage containers designed for your food storage needs.

Observation: The nonfood contact surface of the upright freezer has accumulations of grime and debris. (bottomof freezer has spills that have frozen). When freezer gets low on foods, defrost and clean out the bottom.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: TOne of the refrigerator thermometors is broken and does not record proper temperature.
Correction: Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.

Observation: Refrigerator has broken shelving (duct tape is being used) and there is a drawer missing causing a state of disrepair and damaged.
Correction: Repair the shelving to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the @EQUIPMENT@, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Inspection for the Health Permit renewal.

Observation: Raw food of animal origin holding in a manner that may cause cross contamination of to ready-to-eat food (RTE).
Loaves of bread were stored on top of raw shell eggs in the back porch refrigerator.
Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other raw food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
- Physical Facilities in Good Repair
Observation: Floor / tile in front of the upright freezer in the kitchen is not maintained in good repair. Floor under the tile is weak and the tile on it has cracked.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Observation: Floor area under the triple sink at the baseboard and the corner noted in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
