NOTE: Great job storing chemicals separate and below foods, clean dishware, and single-use containers to prevent contamination. Walk-in coolers & freezers were well lit & well organized. Good job date marking foods and labeling foods when outside it's original container. Great job with storing employee beverage away from food and food prep - please ensure employee beverages all have a lid and straw. Good job have a designated space away from food and food containers for employees to store their personal items such as purses and coats. Reminder to always allow dishware to fully air dry - do not wet stack dishes or towel dry dishes Facility keeps food & equipment temperature logs.

Reminder to not wrap food tightly that is cooling - cool foods uncovered or at least only partially covered (but protected from environmental contamination) to allow the heat to escape to allow foods to cool rapidly. Great job labeling containers holding food / food outside of original containers. Observed good handwashing during today's inspection - Thank You! Walk-in coolers and walk-in freezers are neat, well organized, and well lit. Facility keeps food and equipment temperature logs. No violations observed during today's (4/14) inspection. Great job date marking. Good job with employee beverages having both a lid and straw and being stored and handled in a manner that prevents contamination of food and clean utensils/dishes. Walk-in coolers and freezers were neat, well organized, well lit and food was stored off the floor. Facility keeps equipment, cooling, & food temperature logs. Left poster on cooling foods and a cooling log. Discussed cooling - cooling time starts at 135 degrees F. and you have 2 (two) hours to cool foods from 135 degrees F.to 70 degrees F. Cooling food uncovered in the walk-in cooler is allowed as long as the food is protected from environmental contamination. Cooling uncovered allowed heat to escape from cooling foods whereas cooling covered traps heat in food container and slows the cooling process. Overall great job!
