Observation: Removable skillet handles - some handles were observed charred and cracked, unable to be easily cleaned and sanitized.
Correction: For charred and cracking skillet handles are to be discarded when cracks develop. For cleaning: Remove removable skillet handles when washing the skillets. Both, the skillet and skillet handles should be washed rinsed and sanitized separately for routine cleaning.

Observation: 3 - compartment sink setup, sanitizer auto mix not working, solution -0- ppm for quat and chlorine.
Correction: replace or repair sanitizer auto mix device or use chlorine sanitizer at 50 - 100 ppm.
Sink was setup using chlorine sanitizer as an alternative to malfunctioning auto mix device.
