Discussed with PIC handwashing procedures and cleaning/sanitizing procedures of food contact surfaces. Left the following handouts: "Person in Charge/Demonstration of Knowledge", "CDC Risk Factors for Food Borne Illness"
- Critical: Hands - When to Wash* (corrected on site)
Observation: Employees observed putting gloves on or changing gloves without first washing hands. Employee also observed handling clean dishes without first washing hands.
Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

Observation: Upon questioning PIC about cleaning procedures of food prep area, I was told that these food contact surfaces are only wiped down with a sanitizer.
Correction: Ensure all food contact surfaces are washed, rinsed, sanitized, and air dried. Food contact surfaces are all surfaces that touch food during preparation and service.
