  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations food residue or other debris on the following nonfood-food contact surfaces: Grill area workstation signal device (POS Bump) and date marking data entry device/printer
    Correction: Maintain nonfood-contact surfaces of equipment clean.
  • Equipment
    Observation: Some of the drainlines from mechanical washer and sinks discharge to the floor due to malfunctioning plumbing
    Correction: Repair or replace malfunctioning plumbing.

    Observation: Observed some plastic containers in storage with cracked rims and sides. Observed metal tongs with color coded coatings - some of the coatings are cracked and/or delaminating making the metal surface underneath the loose or cracked coatings to be not easily cleanable.
    Correction: Discard cracked and damaged containers and untensils. If needed provide replacements that are in good gondition free of defects.

    Observation: Observed food debris on food contact surface of cleaned containers stored at grill prep area.
    Correction: Remove soiled containers from storage area and have them rewashed and sanitized.
  • Critical: Sanitizer - Criteria/Chemicals for food contact*
    Observation: Quat sanitizer strength in 5 of 5 buckets with wiping cloths tested at less than 200 ppm (a shade less than 100ppm colormetric 10 second dip test result)
    Correction: increase sanitizer concentration as needed to meet minimum level set by manufacturer.
