EHSS has previously provided educational materials on risk factors/employee health. Training for staff scheduled for Saturday. Form 1B will be reviewed and signed on 3/21/15. Forms from last season for staff are available. Supplier is Richmond Restaurant or Restaurant Depot. Discussed home baked goods. Bacon, sausage, eggs, chicken precooked. Hamburgers raw. Foods are thawed before cooking. No foods are cooled or reheated. Cheese is kept in warmer overnight and discarded next day. Temperature charts are kept. No vegetables are washed on site. Will get Chick-fil-A sandwiches from local restaurant. Three adults normally work in stand. Employees are teenage volunteers with assigned duties which normally do not include food preparation. PCO is Perma Treat. Recommend when in use, stacks of cups are kept in plastic sleeve or in protected cup holder. Opening day is April 18th. Well water sample is required before permit renewal. Provide a quaternary ammonium test kit (QT-10) to measure the sanitizer concentration. 2. Provide thermometers in the reach-in cooler and one reach-in freezer. 3. Recommend posting the employee health policy. Observed good cooking and holding temperatures of foods and good food handling practices by all food handlers.

Elaine Payne PIC. Routine inspection and complaint investigation. Follow-up on complaint concerning undercooked food served to customer. Chicken nuggets may be precooked. Jennifer Godfrey Manager to furnish product information on the frozen chicken. Food is cooked for 3 minutes in deep oil and then checked for temperature. Guideline is to have food cooked to 165 degrees or higher. Mailed Employee Health information to manager for posting in establishment.

In additional to Routine inspection provided food handling education to new PIC. Provided several food educational materials for PIC to use with employees and volunteers. Discussed storage of Pesticides. PIC stats entire building will be renovated before next season in March 2014. Floors will be repainted and sealed.
