This visit was made to conduct a follow up inspection. The stockroom has been reorganized so that the handsink and 3 compartment sink are accessible. The product storage in the display/walk-in cooler has been reorganized to properly separate raw over RTE foods. A food safety binder has been provided to the staff. Thank you!

02/25/2016Follow-up
This visit was made to conduct a routine food inspection. The following items require correction:
1. Please reorganize food storage in the walk in so that the raw shell eggs are not stored above the milk.
2. Please reorganize stock in the backroom so that the hand sink and the three compartment sink is accessible to employees.

  • Critical: Certified Food Manager: Presence Required (corrected on site)
    Observation: At the beginning of the inspection, a certified food protection manager was not onsite.
    Correction: While the facility is in operation, there must be a certified food protection manager onsite. (The food protection manger came from another building nearby during the inspection. Discussed the requirement for a CPFM at all times, and discussed other members of the staff obtaining the card for other shifts.)
  • Critical: Handwashing / When to wash hands (corrected on site)
    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils, or after engaging in any activity that could contaminate the hands. Observed an employee changing gloves without washing hands.
    Correction: ALL food employees shall be washing their hands OFTEN especially after handling trash, using the restroom, handling raw meats, handling soiled equipment and utensils, BEFORE putting on clean gloves, etc. Proper handwashing frequencies will aid in the reduction foodborne illness. (Instructed employee on proper method to wash hands when changing gloves, or alternatively, using tongs to handle RTE foods)
  • Critical: Food Protection from Contamination / Separate Raw from RTE
    Observation: The raw animal food on display is stored in a manner that may cause cross contamination of ready-to-eat food as follows: Observed the raw shell eggs stored over the gallons of milk in the display cooler.
    Correction: Raw foods like poultry, beef, pork, seafood, and eggs shall be displayed to prevent cross contamination. Display all raw foods together and all cooked foods or ready-to-eat foods together. Maintain separation. (discussed alternate methods of storage with the PIC)
  • Handwashing Sink / Accessible at All Times
    Observation: The handwashing facility located in the stockroom is blocked, preventing access by employees for easy handwashing.
    Correction: A hand washing sink shall be maintained so that it is accessible at all times for employee use. Handsink was unable to be blocked due to overstock.

There must be a certified food protection manager present on site during all hours of operation. Obtain a certified food protection card for shift manager that is on site within 10 days and fax or email to me. Failure to have a certified food protection manager on site will result in a civil penalty of $100.00.
  • Critical: Certified Food Manager: Presence Required
    Observation: There was no food protection manager present during the inspection. (New manager has only been there for 3 weeks, has expired Serve Safe certification).
    Correction: Obtain a certified food protection manager card for the manager within 10 days, and email or fax to me. (Person in charge provided proof of enrollment in an online preparation course)
02/20/2015Routine
This visit was made to conduct a routine food safety evaluation.
A Food Protection Manager must be present at all hours of operation. A follow-up will be conducted within 10 days to check for the presence of a FPM. If there is no FPM, a ticket with a civil penalty of $100.00 will be issued.
Employees shall wash hands before putting on gloves to begin a new task and/or when they are contaminated. Hand sinks shall always be stocked with soap and paper towels to promote frequent and proper hand washing.

  • Critical: Certified Food Manager: Presence Required
    Observation: There is no Certified Food Manager (CFM) present in the establishment.
    Correction: It is unlawful to operate a food establishment unless it is under the immediate control of a CFM. It is highly suggested that you have more than one employee with the food manager's certification. Failure to have a certified food manager on site during ALL hours of operation including food preparation, food service, and cleaning/sanitizing of equipment/utensils will result in enforcement action.

(employees washed hands upon request)
  • Food Storage / Prohibited Areas / Toilet Room (corrected on site) (repeated violation)
    Observation: Food storage in toilet rooms. (Observed chips, drinks, etc stored it what used to be the men's bathroom)
    Correction: Food may not be stored in toilet rooms. (Person in charge reported that the food will be moved, and they intend to get some moveable shelves on wheels for more dry storage)
  • Handwashing Cleanser, Available at Handwashing Facilities (corrected on site)
    Observation: Observed that hand soap was not provided at each handwashing sink. (soap provided in the dispenser was not functioning.)
    Correction: Provide hand soap at each hand sink to allow employees to properly wash their hands. (pump bottles were provided)

This visit was made to conduct a routine food safety evaluation.
Food items shall not be stored in the bathroom.
All hand washing sinks must be accessible and supplied with soap and paper towels at all times.

    Observation: Food storage in toilet rooms. (Food stored in what used to be the men's bathroom)
    Correction: Food may not be stored in toilet rooms. (PIC removed food items)
  • Handwashing Sink / Accessible at All Times (corrected on site)
    Observation: The handwashing facility located at the 3 compartment sink in back room is blocked, preventing access by employees for easy handwashing. (sink blocked by beer cans and towels).
    Correction: A hand washing sink shall be maintained so that it is accessible at all times for employee use.
  • Plumbing / Maintained in Good Repair
    Observation: Plumbing connections under the dump sink at the coffee station piping are leaking.
    Correction: A plumbing system shall be maintained in good repair.
03/06/2014Routine
This visit was made to conduct a pre-opening inspection. The following items were corrected:
-all equipment are properly sealed or are provided with 4" legs except the chili cheese dispenser/machine. Provide 4" legs within 30 days
-hot water heater has sufficient capacity
-dump sink properly sealed
-wall behind turbo chef properly sealed.
Okay to operate.

No violation noted during this evaluation.
12/27/2013Pre-Opening
This visit was made to conduct a pre-opening inspection. The following items require correction:
1. Microwaves need to be on 4" legs for cleaning underneath (or seal to surrounding counter).
2. Hot water heater not large enough. Working with contractor-new one on order.
OK to issue temporary CO so store can stock.
Contractor will contact 703-746-4910 for follow-up when new water heater is installed.

No violation noted during this evaluation.
12/18/2013Pre-Opening
This visit was made to conduct a pre-opening inspection. The following items need to be corrected:
1. Install handwashing signs at all handwashing sinks.
2. Move soap dispenser away from 3-compartment sink to handsink in back room.
3. Seal to wall or counter the following:
-3-compartment sink
-donut and bagel cases
-hot dog/sausage rollers (front only)
4. Provide backflow for carbonater
5. Install a mop rack (close to mop sink).
Hot water heater to be replace. We will need a Certified Food Manager present at the follow-up inspection. Call 703-746-4910 to schedule a follow-up inspection when the work has been completed.
