Test kit provided and used to measure sanitizing solution concentration Observation: Must have test strips to maintain sanitizer at proper concentration.
Cleanability of floors, walls, and ceilings Observation: 1) Seal all exposed wood with 2 coats of light colored paint or varnish. 2) Install cove base at floor/wall juncture to aid in cleaning. 3) Caulk front counter/ ice cram case juncture for an easily cleanable juncture.
Food on display is protected from contamination by consumers Observation: Require additional sneeze guard to be install by hand sink to prevent consumer contamination.
