    Observation:One can of pudding dented on side, warped top seam, removed from usage area. Corrected on site.
  • Storage of clean linens, single-service, and single use articles
    Observation:Has a case of single usage food containers stored on floor in dry storage area, must store all at least 6 inches off floor, moved to shelving those that will be used, was reorganizing product.
  • When to wash
    Observation:Observed volunteer at dishmachine area going from prepping soiled dishes for warewashing to handling clean dishes without properly washing hands. Discussed and corrected on site.

    Paper towel dispenser in back area was jammed. All hand sinks must be provided with hand drying at all times. Make repairs as needed.
  • Food storage - preventing contamination from the premises
    All food must be stored a minimum of 6" off the floor. Move product to provided shelving.

  • Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days
    Deli ham and chicken sald in the walk-in cooler were past the 7 day date mark requirement. All potentially hazardous foods (PHF) must be used or discarded within 7 days. Items discarded during inspection. CORRECTED.
  • Food storage - preventing contamination from the premises
    Several boxes were on the floor in the walk-in cooler. All food and food items must be stored a minimum of 6" off the floor. Move boxes to shelving.
  • Material characteristics of non-food contact surfaces
    Currently reusing cardboard boxes to hold frozen dinners in walk-in freezer. Non-food contact surfaces must be cleanable and nonabsorbent. Do not reuse cardboard.
