  • Observed soups that had been cooked/cooled down with no time of removal from heat.
  • The hand sink in the service area has very little water and takes a while to get hot water. Per kitchen manager she put a work order in.
  • Observed mouse feces to the right of the 2 door reach in cooler in the serving area. I pointed it out to the kitchen manager. There appears to be a gap in the wall where the feces is most concentrated. We went outside and found more feces and what looks like a gap in the foundation/wall. She will contact Orkin today. She said they treat the facility every 2 weeks.

  • Observed 3 dented cans stored on the dry storage shelve in the back area. Remove dented cans.(Facility manager voluntarily removed the dented cans).
  • Observed build up of dirt on guard in the ice machine. Clean.
  • Observed adhesive glue stored in the miscellaneous drawer in the kitchen. Utensils were also stored in the same drawer. Store chemicals separate from utensils.

  • Observed cob webs/dust build-up behind the ovens/stoves. Clean
  • Observed missing air intake cover in the service line room above the ice machine. Replace vent cover.
  • Observed light bulb out in the walk-in freezer. Replace.

  • Three large containers with rice, sugar, and flour not labeled in kitchen area. Manager stated that clients wash the tubs and the labels get washed off. I suggested putting the label on the cart the tubs sit on because they are always on it when not being washed and dried. I suggested a color coded label.
  • All non-food contact surfaces need to be washed, rinsed, and sanitized routinely throughout the day. These surfaces include but are not limited to drawer handles and the back of the red coffee maker.
