  • Observed leaky faucet on the 3-compartment sink.
  • There were towels on the floor in front of the dish drying area.
  • There is black on the floor under the 3-compartment sink.
  • There was a spray bottle of 409 and metal polish in a cabinet next to aluminum foil. Also in a cabinet there was a spray bottle of Lysol next to plates. The chemicals are supposed to be stored in the cabinet under the sink, which is where they were moved to. The plates were disposed of and the aluminum foil was moved to be used for crafts. Discussed having a sign to remind employees proper storage of chemicals.

  • There were dish towels on a shelf next to the 3-compartment. Discussed getting more of a rack so dishes can dry properly.
  • The chlorine sanitizer in the 3-compartment sink barely had a color change on the test strip. It was made again to be 50ppm.
  • There were dish towels on the floor.
  • The wall behind the 3-compartment sink appeared to have water damage and the paint is peeling.

  • Found temperature documentation charts that showed ground beef and other meat dishes with final cook temperatures not meeting final cook temperature minimums. Ensure final cook temperatures are being cooked to the minimum temperatures before serving. Gave facility final cook temperature charts at time of inspection and spoke to Kelly Meals at TCRC regarding sending this facility improperly heated foods. Kelly stated she will be training her new staff on minimum final cook temperatures and that her staff is attending FSSMC class in January.
  • Kitchen employee was observed with no hair restraint. Ensure proper hair restraints are used.
  • Sanitizer in buckets and spray bottles should be between 100-200 ppm. Sanitizer concentration was corrected on site at time of inspection.
