Observed unsealed wood shelving in cabinets under the dining area soda fountain. Also observed broken gaskets in cooler under front service line. Replace or repair damaged gaskets and seal wood shelving so they are smooth, durable, easily cleanable, and in good repair.
Observed food buildup in gaskets of 4-door cooler, by prep area. Also observed pink buildup in ice machine drip tray and grease buildup in crack in front of fryers. Routinely wash, rinse, and sanitize all food contact surfaces.

Observed employees on the cook line, using bare hands when handling ready to eat food. These employees were using good hygiene. I looked in the corporate policies for food prep and all had said to use gloves. Discussed making a bare hand policy including when/how to wash hands, good hygiene practices, what ready to eat foods you touch and why you can't use gloves. This will need to be included in the HACCP and have annual training on it with employees.
Observed cabinets near dining room soda machine unsealed. Observed soup hot holding container label tearing.
In the room with the ice machine there is debris that appeared to look like insects. After pest control sprays insects come out to die. You need to make sure you clean so that you can better monitor.

Observed employee improperly washing their hands. When he turned off the faucet he touched the hands with his hands instead of using a paper towel. You need to conduct a training ensuring that employees know how to properly wash their hands. After the training, management needs to verify that all employees are properly washing their hands. I need documentation of this by 4-8-15.
The cabinets under the soda fountain in the dining room has the outer coating starting to come off leaving wood exposed. Discussed sealing the wood making it easily cleanable.
There were crumbs at the bottom of the reach in freezer that has chicken strips.
