JCDH 2.2 Provide readily available documentation of food safety training for all employees at all hours of operation. / FSE trains employees; all training certificates expired in June 2011 and there were certificates that had not been filled out with employee name and training info.

4-202.16 Replace damaged gasket on freezer door.
Gasket torn from freezer door, hanging down. Take corrective action.
5-205.15 Repair plumbing.
Make repairs to the hot water faucet handle at the Grill hand sink. The hot water faucet handle shall work properly to cut off and cut on the hot water.

I discussed the Alabama Seafood Labeling Law with Yvette Embry, the General Manager. The establishment has the seafood law posted next to the inspection report. I gave the GM an on-line Food Handler class bulletin.

4-501.114, 4-703.11 Sanitize utensils with chlorine for 10 seconds or more at the following corresponding concentrations and temperatures : 25 ppm at 120 F or higher; 50 ppm at 75 F or higher; or, 100 ppm at 55 F or higher./ Dishmachine was ran, chemical sanitizer was not detected/ Cease use of dishmachine/ Use 3 compartment sink to manually wash, rinse, and sanitize food equipment and utensils.
4-601.11 Repair dish machine and wash, rinse, and sanitize in 3 compartment sink until repair is verified by JCDH.

5-202.11 Provide easily cleanable handwashing sinks, toilets, urinals, toilet lids and seats, and other plumbing fixtures.
The mens toilet seat should be replaced, the toilet seat had been carved on.
The womens toilet seat should be replaced. The toilet seat surface had peeled.
5-205.15 Repair condensate leak in WI freezer.
Repair the condensate leak at the drain line in the walkin cooler.
