As some of you know, SWMBO has been on the hunt for a Cavalier. Well, after joining the San Diego Cav Club, she’s made some contacts. After a fairly rigorous interview process, we have been granted the ability to acquire one of these fine pooches. Anyway, here he is (we don’t actually take possession for another month, as his owner has a couple females he needs to knockup.) Dunno if we’ll get the opportunity to buy a pup or not. All I know is that this dog is gonna live like a king!

There is nothing wrong with taking a dog on a breeding contract as long as the terms are really clear and all in writing.
Any dog bought from a reputable breeder is going to have a return-to-breeder contract, so free and clear ownership of high end dogs isn't easy to come by for people just starting out in show quality dogs.
That's a lovely well bred dog. No breeder would hand a dog like that to first time dog owners with no strings attached. OP is getting a quality dog and a mentor all in one package.
