If you're looking for things to stop and see along the way in Nebraska, here are a few suggestions:

Ogallala
  • Lake McConaughy
  • Boot Hill Cemetery
  • Front Street (kitschy strip mall with a western facade)

Paxton
  • Ole's Big Game Steakhouse & Lounge - I haven't been here, but I know folks who recommend it

North Platte
  • Buffalo Bill Ranch State Historical Park
  • Cody Park (there used to be some wildlife here)

Gothenburg
  • Pony Express Station

Kearney
  • Great Platte River Road Archway
  • Fort Kearny State Park

Minden (15 mins south of I-80)
  • Pioneer Village - haven't been, but people recommend it

Omaha
  • Carter Lake, Iowa - a geographical oddity caused by a flood that changed the course of the Missouri River. It's a sliver of Iowa bordered by the Missouri and completely surrounded by Nebraska. Not much to see, I just think it's interesting heh.

I'm a country kid (+ truckdriver, grew up with truckdriver parents) and love to drive long days and long distances and see as much as possible each day. I start my driving trips pre-dawn and end after dark, preferably in a Hot Springs pool!

for me...
Cottonwood,
Jerome
Sedona,
Flagstaff
Monument Valley
Natural Bridges
Bear's Ears (Nat Mon)
Four Corners (or direct backroads to Cortez) - but tough to miss Arches and Canyonlands while you are so close.
Mesa Verde
Durango
Pagosa...

Wolf Creek
Sand Dunes
Salida
Canon City
Manitoba
Garden of Gods
COS stuff

Save your steak / prime rib / catfish diet until Nebraska! YUM, lots of good food in Nebraska (fit in a few FREE community potlucks and FREE farm stays. - breakfast to die for (welcome after your help at 4:30AM milking)
Hagler, NE, Benkelman, Holdredge, Minden (Pioneer Village / Ft Kearney, Windmill State Park if time)
Nebraska state capital (Lincoln)
U of Nebr Ice cream store!!! (Lincoln)
Warren Buffet's final lunch fund raiser. (Omaha) (Mc Donalds will do!l)

In Iowa, the Amish villages, World's largest Truck Stop, Ertl Museum, and Villages of Van Buren (SE are nice side trips)

Too bad you will miss SD, ND, MN, and Ole's Big Game bar in Paxson , NE. but there is always another trip.

My wife is a saint. Not sure how much of a saint if I take 10 days though.
She might grow to enjoy the peace and quiet of you being GONE!

We do a lot of solo travel. She's in Hawaii this week with (3) sisters, (All left Colorado the day they got out of HS) 40+ yrs later some are still in HI. Next week we meet in SF, LA, SD, following week she goes to Prescott, AZ, then we meet in TX, then she goes to visit a cousin in DC, then we meet in Chic, then we drive to CO. By July, we should be back in WA for fresh berries and salmon.

Travel while you can, enjoy the journey.
Retire early, retire often!

Your trip is 500 miles the most direct way or 600 miles the scenic way through Flagstaff. I don’t see anything “leisurely” about doing that drive in one day by yourself. How will you have time to stop and see anything? Do you normally do marathon drives like this by yourself?

Because I am on the road at 0400 after I drop my wife at the airport. Will be dark for a couple hours anyway. I have a walking disability so my main goal is to just see a part of the country I have never seen and stop for some pics. I wish I had days and days to spend in that area but I do need to get back at some point. I am retired but the wife is not. I don't mind this long drive since I am starting so early.

Thanks Stealth. Lot's of good info. If money was no issue then it would be easier to stay out longer and see more but life will await me. With 5 acres of grass to cut (zero turn) and a dog who will be missing me after 3 weeks I'll be ready to get home. But I would love to see much of what you've listed. Even the farm life. I grew up with several uncles owning farms in Fla and I loved the farm life. Except for the Tobacco barns that is.

I’d take the Flagstaff route, but not to visit Flagstaff. Take a detour on AZ64 to the east entrance of the Grand Canyon for a stop at Desert View. Then also take the previously mentioned detour into Monument Valley. That’ll fill your day

Default enjoy your trip!

FYI: the end of June coincides with wheat harvest across KS, with custom harvesters headed N into NE. Not a problem on Interstate, but you can get behind trucks hauling grain to storage silos in towns on 2-lane highways.

An acquaintance, Ted Cable, has written a guide to I-70. I've bought the wife a copy, but haven't read it myself:

https://www.amazon.com/Driving-acros.../dp/0700612602

Along I-70, it should be made a point to stop in Lucas, KS, to see the Garden of Eden.

I've driven across NE, Scottsbluff => Lincoln, @ night, in a Blizzard. Can't rec that. We've taken in the sand hill crane migration along the Platte. Have been to https://www.nps.gov/home/index.htm Homestead Nat'l. Historic Park &
https://www.mindennebraska.org/201/Pioneer-Village, the latter was not our cup of tea.

I hadn't noticed your comment about a walking disability. In that case Desert View is probably not a good choice. There are a few other viewpoints west of there which have much shorter walks. You'll be there early enough to beat the crowds, I'd think.
