  • Basic - Baking/pizza pans have accumulation of black debris. Observed the perforated sheet pans have a build-up of food debris on the pans. According to the GM, these pans are sent to the commissary about on e a month for cleaning.
  • Basic - Cutting board has cut marks and is no longer cleanable. The cutting board on the steam table behind the front counter is deeply grooved on one side. Need to start using the other side. **Corrected On-Site**
  • Basic - Soil residue build-up on nonfood-contact surface. Observed the inside of the dish machine is soiled.
  • Basic - Unwrapped single-service utensils not presented so that only the handles are touched. Plastic knives, forks and spoons near the steam table behind the front counter.
  • Intermediate - Accumulation of food debris/grease on food-contact surface. As explained by GM Lorena Brana, full size sheet pans are not washed at each location. They are sent back to the commissary to get cleaned and sanitized. If the store needs to use a sheet pan, they put a piece of parchment paper on the pan before using it without cleaning and sanitizing the pan first.
