  • Critical - Dishmachine chlorine sanitizer not at proper minimum strength. Provide sanitizing solution, of two capfuls bleach per gallon of water, for storing wiping cloths between uses.
  • Critical - Manager lacking proof of Food Manager Certification. Obtain Food Manager Certifixation by 7/14/2012. Call 866 372 7233 to schedule an exam. Keep a copy of the certificate on the truck.
  • Critical - Mobile food dispensing vehicle license number not permanently affixed on the side of the unit in figures at least 2 inches high and in contrasting colors from the background of the vehicle. Affix License Number 50644, in white numerals two inxhes tall, on the outside of the truck.
  • Critical - No proof of required employee training provided. To order approved program food safety material, call DBPR's contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Employees must pass Food Safety Teaining within 60 days of hiring. Keep proof of completed training on premises.
  • Critical - Observed employee engage in food preparation, handle clean equipment or utensils, or touch unwrapped single-service items, without washing hands. Provide disposable-plastic gloves. Wash hands every time you change gloves.
