Correction: Maintain hot potentially hazardous foods at or above 135°F. Operator placed sauce in walk in cooler.

Observation: Bleach in wiping cloth buckets is not being used according to manufacturer’s use directions. Chlorine concentration is 200 ppm.
Correction: Change procedures and provide training to employees on proper use of toxic chemical following manufacturer's directions for use.

Observation: The date when the last shellstock was sold from the container is not listed on the tag.
Correction: When the last shellstock is sold from the container the date of sale shall be recorded on the tag.

Observation: Ice cream scoops were improperly stored dipper well. Water was not running. It was turned off.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
