Observation: Food employee observed improperly washing hands by not using soap and another employee using a cloth towel to dry hands.
Correction: Train food employees in proper handwashing techniques.
- Critical: WHEN TO WASH
Observation: Employee observed handling raw fish and then ready to eat foods (french fries) without washing hands.
Correction: Before working with food, clean equipment, utensils, and single-use or single service articles food employees shall properly wash their hands.
- Critical: PREVENTING CONTAMINATION FROM HANDS - NO BARE HAND CONTACT WITH RTE-FOODS
Observation: Employee observed handling ready-to-eat food (french fries, chips, bread, etc) with bare hands.
Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.
- EATING, DRINKING, OR USING TOBACCO
Observation: Employee was observed eating french fries out of the pan of cooked fries in the kitchen area.
Correction: Provide employee break room or designate an area away from food preparation for eating and tobacco use.
- PERSONAL CLEANLINESS - HAIR RESTRAINTS
Observation: Employee noted working in food preparation/cooking area without a hair restraint.
Correction: Provide employees working in food preparation and cooking areas with effective hair restraint (hat, hair net, beard restraint, etc.).
- FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR
Observation: Bags of onions and two buckets of sliced potatoes are stored on the floor in the walk-in cooler. A box of potatoes is stored on the floor outside the walk-in cooler.
Correction: Store all food items 6 inches above the floor.
- LIGHT BULBS - PROTECTIVE SHIELDING
Observation: The light located in the walk-in cooler is not shatter resistant.
Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs.
- CLEANING, FREQUENCY AND RESTRICTIONS
Observation: The interior surface of the walk-in cooler has dust on the ceiling and walls.
Correction: Clean the physical facilities at a frequency necessary to keep them clean.
