Observation: Sausage and ground beef were sitting on the counter at 60-54°F. It was discussed that the food had just come out of the pizza prep cooler that is being cleaned. Food was moved to another cooler and temperatures are dropping.
Correction: Maintain cold potentially hazardous foods at or below 41°F
- IN-USE UTENSILS, BETWEEN USE STORAGE
Observation: Scoops was improperly stored in ice cream toppings.
Correction: Store in-use utensils in the food item with handle extended, or on a clean surface.
- FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR
Observation: The ice cream cones are stored on the floor by the ice cream machine.
Correction: Store all food items 6 inches above the floor.
- EQUIPMENT AND UTENSILS - MATERIAL FOR CONSTRUCTION AND REPAIR
Observation: The interior ceiling of the True 2 door cooler is lined with aluminum foil, exposing insulation.
Correction: Discard equipment and utensils that are not: corrosion resistant, durable, able to withstand repeated warewashing, smooth, easily cleaning, nonabsorbent, and resistant to pitting, scratching, scoring or decomposition.
- EQUIPMENT AND UTENSILS CONFORM TO ANSI STANDARDS
Observation: Crock Pot is not ANSI certified or approved by the department.
Correction: Unapproved equipment shall be removed from food service.
- EQUIPMENT AND UTENSILS - PROPER ADJUSTMENT (repeated violation)
Observation: Cooler door seals are not torn on Hobart cooler and True 2 door. Seal is duct taped on pizza prep cooler.
Correction: Equipment components shall be kept intact, tight, and properly adjusted.
- UTENSILS, EQUIPMENT AND LINENS - STORING PROHIBITIONS - CLEAN DRY LOCATION
Observation: Pizza boxes were stored on the floor.
Correction: Clean equipment and utensils, laundered linens, single-use and single service articles shall be stored in a clean dry location, not exposed to contamination and off the floor.
- TOILET FACILITIES - RECEPTACLES - COVERED
Observation: Unisex bathrooms are not provided with a covered waste receptacle.
Correction: Provide a covered waste receptacle in female bathroom for use with sanitary napkins.
- FLOOR AND WALL JUNCTURES, COVED, AND ENCLOSED OR SEALED
Observation: Floors have been replaced in some areas and the juncture between old and new floors has created a place for debris to accumulate
Correction: Finish floor junctures in a way that will create a smoot transition between floors.
- LIGHT BULBS - PROTECTIVE SHIELDING
Observation: Lights located above the ice machine are not shatter resistant.
Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs.
- CLEANING, FREQUENCY AND RESTRICTIONS
Observation: The floors under equipment are soiled under soiled with food debris and dirt. The ceiling above the ice cream machine has a heavy dust accumulation.
Correction: Clean the physical facilities at a frequency necessary to keep them clean.
