Correction: Discard food from unapproved sources, they cannot be offered for sale or used in the restaurant. No food items may be made at home and used in the restaurant or offered for sale. In order to sell homemade jam and preserves in the restaurant, a State of Wisconsin food processing license is required. Department of Ag contact information given to operator.

Critical: PHF/TCS, COLD HOLDING (corrected on site) Observation: Whole milk in True 2 door reach-in undercounter cooler is cold held at 49.6°F.
Correction: Maintain cold potentially hazardous foods at or below 41°F. All potentially hazardous items (milk, half and half, almond milk, and whipped cream) were moved into the standing glass True 2 door reach-in cooler. Do not use this cooler until it is holding proper temperature. Owner will clean the condenser unit tonight and adjust the temperature of the cooler. Correct By: 22-Sep-2015
WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES Observation: The chlorine test kit used to test the sanitizer concentration of the warewashing machine got wet and is no longer able to be used.

USING A HANDWASHING SINK - ACCESSIBLE (corrected on site) Observation: Handwashing sink in the kitchen observed to be blocked by a large fall decoration during inspection and is unavailable for proper handwashing.
Correction: Keep handwashing sink free of obstructions and in working condition at all times to allow for frequent handwashing. Obstruction was moved and handsink was available. Correct By: 15-Sep-2015
HAND DRYING PROVISION (corrected on site) Observation: No single-use toweling or other hand drying device available at the handwashing sink in the kitchen, in the espresso area, and in the wait staff area.
Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing. Paper towels were provided at all sinks during inspection. A paper towel dispenser for the kitchen has been ordered. Paper towels that fit in the dispensers are also on order. Correct By: 15-Sep-2015
EQUIPMENT AND UTENSILS - GOOD REPAIR Observation: Display cooler is not maintained in good repair. The rope that allows the right side door to be self-closing has broken and therefore the door does not always get properly shut by employees.
