    Observation: Cutting surfaces notes with deep grooves and discoloration.
    Correction: Resurface or discard cutting boards or blocks with excessive scratching or scoring.

    Observation: The following noted in need of cleaning:
    -Shelving throughout
    -Equipment, under equipment, equipment handles and knobs
    -Meat slicer
    -Can opener (or remove from premise if not in use)
    -Inside of ice machines
    -Soda gun nozzles and holsters
    -Underneath ice plates

    Correction: Clean and remove dust, dirt, food residue, and other debris from all food and non-food contact surfaces of equipment.
  • INSECTS AND RODENTS - OUTER OPENINGS PROTECTED
    Observation: Evidence of pests noted in the downstairs storage area. There is a gap between the threshold and the bottom on the door leading from the downstairs storage area to the outside which could allow the entrance of insects or rodents.
    Correction: Repair this hole or gap so that entrance by insects or rodents into the food establishment is prevented.
  • CLEANING, FREQUENCY AND RESTRICTIONS
    Observation: Floors, walls, and ceilings noted in need of cleaning.
    Correction: Clean the physical facilities at a frequency necessary to keep them clean.

    Observation: Observed air gap drain on food prep sink soiled. Clean as often as necessary.
    Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
