Critical: PHF/TCS, COLD HOLDING Observation: The following temperatures were taken in the prep cooler (ambient 49F): cooked chicken-49F, sliced tomatoes-45F. The food from the prep cooler was moved to the Maximum cooler during the inspection. Monitor cooler, food shall be kept in another cooler until the prep cooler can maintain potentially hazardous food at or below 41F. Temperature will be checked by sanitarian next Wednesday.
