- Critical: PHF/TCS, COLD HOLDING
Observation: Air temperature (creamer, milk) of one door cooler is 48 degrees. Also breakfast items in 2 door cooler stored at 51-52 degrees.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Also provide an accurate, working thermometer in each cooler.
During my inspection, a refrigeration contractor was on site and immediately repaired/adjusted these two coolers.
- IN-USE UTENSILS, BETWEEN USE STORAGE
Observation: Ice scoop (inside ice bin near drive thru window) was stored with handle directly in contact with ice.
Correction: Keep handle from contacting drink ice between uses.
- NON-FOOD CONTACT SURFACES - CLEAN (corrected on site)
Observation: Inside of one door cooler (milk cooler) is soiled.
Correction: Clean cooler and keep it clean. (corrected during inspection)

- Critical: FOOD CONTACT SURFACES - SANITIZED BEFORE USE AFTER CLEANING
Observation: Observed employee rinsing utensils with spray hose (no detergent wash), then dip utensils in sink with no sanitizer, then store as clean. Solid Sense Sanitizer feed system is not working.
Correction: Clean and sanitize all utensils and equipment before contact with food. Kay Sink sanitizer powder packets are available to add to sanitizing sink until feed system is available. Correct By: 10-Dec-2013
- HANDWASHING SINKS, INSTALLATION - WATER TEMPERATURE
Observation: Hot water is only intermittently available at employee handwashing sink. Water is often ice cold.
Correction: Water temperature at a handwashing sink sink shall be at least 85°F and no more than 110°F. On demand water heating system is not working properly and must be repaired. Correct By: 10-Dec-2013
- HAND DRYING PROVISION (corrected on site)
Observation: No single-use toweling was available at employee handwashing sink for hand drying. Battery in paper towel dispenser needed replacing.
Correction: Paper toweling must be available at handwashing sink at all times to facilitate proper handwashing.
- FLOORS, WALLS AND CEILINGS - CLEANABILITY
Observation: Several floor tiles between utensil wasing sinks and walk-in cooler are cracked.
Correction: Provide floors that are designed, constructed, and installed so they are smooth and easily cleanable.
