  • IN-USE UTENSILS, BETWEEN USE STORAGE
    Observation: Utensils used to press and flip burger patties are improperly stored on cloth towels that are not changed frequently.
    Correction: Store in-use utensils on a clean surface. Change towels and utensils at least every 2 hours.
  • FOOD LABELS - LABEL INFORMATION
    Observation: Pint size containers of frozen custard, that are offered for sale from self serve glass door freezer, do not have ingredients listed on the individual containers.
    Correction: Label information shall include: common name of food, ingredients in order of predominance, quantity, name of business or manufacturer, major food allergens, and nutritional information.
  • VENTILATION HOOD SYSTEM - FILTERS
    Observation: The hood ventilation system above the grill has disposable mesh filter covers that were installed to keep metal filters and ductwork clean. These mesh covers that were white are now brown/black. Smoke is not being pulled into the ventilation hood properly. Smoke was observed going outside of the hood.
    Correction: These mesh covers are not approved unless they are changed more frequently, and are able to provide proper ventilation and air flow to adequately pull all smoke into the hood system.
  • HANDWASHING SIGNAGE
    Observation: No handwashing signage provided in public toilet rooms.
    Correction: Provide handwashing signage at all handwashing sinks in toilet rooms or on door inside toilet rooms.
  • REPAIRING - PREMISES, STRUCTURES, ATTACHMENTS, AND FIXTURES - METHODS
    Observation: The plumbing drain line below the running water dipper well is leaking onto the floor.
    Correction: Repair the drain line.

    Observation: Plastic cups are inside cookie/candy storage containers in back room.
    Correction: Do not use cups to dispense food product. Use only handled scoops. Do not let the handle come in contact with food. Correct By: 10-Dec-2013
  • HANDWASHING CLEANSER AVAILABILITY (corrected on site)
    Observation: Soap dispenser at one employee handwashing sink is broken.
    Correction: Soap dispenser was ordered. Use a small pump dispenser in the meantime. Correct By: 10-Dec-2013
  • UTENSILS, EQUIPMENT AND LINENS - STORING PROHIBITIONS - SELF DRAINING POSITION
    Observation: Clean pans are being stacked while they are still wet.
    Correction: Clean equiment and utensils shall be stored in a self-draining position to allow for air drying and may not be stacked until dry.
  • CONTROLLING PESTS - HARBORAGE CONDITIONS
    Observation: Fruit flys observed in north hand sink area and near soups behind front counter. Management has been trying to eliminate fruit flys, but has not been successful.
    Correction: Contact licensed pest control service to eliminate fruit flys and their hareborage areas. (WilKil is contracted here). Correct By: 10-Dec-2013
