TIME AS A PUBLIC HEALTH CONTROL - 4-HOURS - NOT MARKED Observation: Cooked pasta, using time as a public health control for 4-hours, was not properly marked or identified with a discard time.
Correction: Food items shall be marked or otherwise identfied with a time that is 4-hours past the point in time when the food is to removed from temperature control. 3 bins of pasta were discarded. Pascual showed me the corporate pasta food safety guidelines that were posted, but had not been approved by the West Allis Health Department. New stickers were developed showing pasta name, time out of cooler, and 4 hour discard time. The plan is now approved. This approval will be rescinded if procedures are not followed properly.
Copy of "Pasta Food Safety Guidelines" with sample stickers will be filed with this inspection report.

Critical: PHF/TCS, COLD HOLDING Observation: Cooked spaghetti and fettuccine noodles in plastic, iced bins are cold held at 50°F.
Correction: Maintain cold potentially hazardous foods at or below 41°F. On prep line, use stainless steel bins, instead of plastic bins, to cold hold cooked pasta. Properly ice the pasta (level of ice in outer bin must reach the highest level of the pasta).
