    Observation: Rotary slicer is visibly soiled with old food residue.
    Correction: Maintain food contact surfaces in a clean condition. Recommended slicer be fully disassembled and soaked with spray of degreaser, followed by rinse, sanitizing, and air drying. Once fully cleaned and sanitized, reclean and sanitize the slicer every four hours while in use. Cover with food-safe material when not in use. Correct By: 09-Jan-2016

Discard all potentially hazardous/TCS foods which have been above 41F for more than four hours or for an unknown amount of time. Maintaining PHF (TCS) foods under safe cold temperature control requirements will limit the growth of pathogens that may be present in or on the food and may help prevent foodborne illness.
