Observation: Employee observed handling prepping salads with bare hands.
Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods. Owner needs to train all employees that any ready to eat foods may not be handled by the bare hands at any time. Correct By: 23-Apr-2015

Observation: Potato soup in the walk in cooler prepared 04/21 temperature is 54 degrees on 04/22. The container of soup is large and the product is not cooling rapidly (w/in 6 hours) as required.
Correction: Adjust method or procedures to cool foods from 135°F to 70°F in the first 2-hours and from 70°F to 41°F in an additional 4-hours or if prepared or received at ambient temperatures cool to 41°F in 4-hours. Facility will need to cool in smaller containers or ice bath product down to temperature prior to refrigeration. Correct By: 23-Apr-2015

Observation: There are many items date marked and many items not date marked. In the walk in cooler: potato salad, potato soup, taco meat, chicken wings..
Correction: All ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. Correct By: 23-Apr-2015
