  • One of the deli's metal stemmed thermometer was not properly calibrated. It read 50f in an ice water bath. I separated it and explained how to calibrate the thermometer.
  • In the cheese area both right handles of the reach in coolers are broken. The stickers/labels on the pressure fryers are coming off. A corner of the deli counter has the coating coming off. The sink is coming away from the wall in bakery. In the deli the motor cover is coming off. The seal and inside handle of walk in deli cooler are broken.
  • In the cheese area: the top of the reach in coolers, handles and seals of coolers need cleaned as they have cheese on them. In the tracks of the cold holding coolers need cleaned (sandwich and lunch meat coolers). The deli's metal stemmed thermometers had chicken buildup on them. In between use they are only put in sanitizer. They also need to be washed, rinsed, and sanitized.
  • The sprayer in the deli leaks quite a bit.
  • Handsink was not accessible in the bakery or cheese section. In the bakery there was a box on the hand sink. In the cheese section there was a sample stand in front of the hand sink. They were both moved. Make sure to remind employees not to put anything in or around the hand sink.
  • The floor in the cheese area needs cleaned around equipment. The floors in prep areas and walk in cooler need cleaned. The floors in the deli under equipment, especially fryers, needs cleaned.
  • The wall behind and under the 3-compartment sink in the deli has buildup on the wall.

  • In the cheese area both right handles of the reach in coolers are broken. The stickers/labels on the pressure fryers are coming off. A corner of the deli counter has the coating coming off.
  • In the bakery: There were crumb trays under bread that had an accumulation of crumbs that had been there more than a day. Also above those trays there were crumbs in between plastic and wood. The drawers under the donuts had crumbs. The bread slicer for the customers had a lot of crumbs in and underneath. In the deli: The pressure fryers on the side and front had an accumulation of grease. The following areas had an accumulation of food debris: underneath the sandwich station, in the tracks of the sliding doors to the hot holding and cold holding, the top of the sandwich station on the lids and in sticker storage, the bottom of the reach in freezer. Also the can opener had buildup in it. I pointed these areas out to the manager.
  • The hand sink by the cheese was out of paper towels.
  • The wall behind the 3-compartment sink in the deli had black in the sealant and buildup on the wall.

  • Observed employee improperly washing their hands in Starbucks. She touched the handle of the faucet to turn it off instead of using a paper towel. Also in the deli section there was an employee who was taking the temperature of chicken without gloves, even though she has acrylic nails and several rings on her fingers. Later she did put on gloves, but I didn't notice her wash her hands before putting on the gloves. There needs to be a training for employees going over not only proper handwashing, but also proper glove use. I need documentation of the training as well as verification all employees are washing their hands properly by 3-4-15.
  • The employees in Starbucks were not wearing effective hair restraints while doing food prep.
  • There is tape around the soap by the handsink to the bakery. The plastic around the inside of the walk in coolers in the bakery and deli were broken or cracked. In the storage of the bakery there was cardboard taped to the side of a storage rack. There is tape on squeegee. The wood coating by the donuts is coming off. The lid to the flour for fried chicken in broken. The phone line connection box is broken and taped to the counter but is falling down. Both reach in coolers in the cheese area have broken handles.
  • Starbucks couldn't locate their test strips.
  • There was crumbs, icing, and other food buildup in areas throughout the bakery. There were crumb trays under bread that had an accumulation of crumbs that had been there more than a day. The drawers used to hold clean utensils had buildup in them. Handles to the storage drawers as well as walk in cooler/freezer had buildup. The racks were covered in icing as well as the icing containers themselves. The free sample containers had not been cleaned after their last use. The bread slicer for the customers had a lot of crumbs. In the deli utensils are stored in buckets, but the buckets had not been cleaned.
  • In the cheese section the handsink was blocked by a cart. The section was very cluttered and had 2 carts in a small space making it hard if you needed to wash your hands.
  • There was buildup of crumbs and icing on floors throughout the bakery section.
