Sometimes people are doing something THEY'RE excited about over the weekend, and want to share, but they ask the other person first, to be polite/give them a lead-in to bring up their thing, and so as not to come off like a person who only wants to talk about him/herself.
lmao too but also wearily shaking my head that you automatically saw the comment as being sarcastic. I hope social mores didn't suddenly become a totally alien concept and that some of the feelings expressed here aren't today's norm.
What's so weird or imposing to say to a co-worker as you're leaving on a Friday night, "Have a good weekend! Anything special planned?"? If they follow with a, "Nothing much at all, you have a good one too!" then that's that. If they respond with, for instance, "Looking forward to seeing (such and such) movie!", then why not ask some time on Monday, "By the way, how was the movie? Worth seeing?"
As poster TabulaRasa said, "I've always found people who are super guarded about basic, routine stuff to be a little odd." Me too.
I never understood or bought into this. If I never hung out with the co-worker why ask me that?
I understand asking if its a holiday, but a normal weekend? whats the point of asking that?
You should tell them you went to an orgy where the hosts looked exactly like the co-worker and their spouse/gf/bf. Be sure to include how great it felt when you had the big O in their rear end.
The OP probably doesn't have much going on and is embarrassed. That's the only reason why someone would make a big deal out of an innocuous question like that.

Maybe they are mad scientists and looking to replicate the life of a normal human being in some kind of nefarious plot to produce androids..., maybe they are trying to steal your identity, maybe they want to come over to your house and burglarize it, hence the need for your itinerary.
Maybe, perhaps, maybe they are just making fringgin small talk.
How about drinking with a possibility of sleeping???
IDK, just saying.
