Hi all,

I recently relocated to DC and I cant seem to find a butcher here who will sell custom cut meat. I am specifically looking for one who will grind pork, beef, etc to my specifications (I don't want the pre packaged, fine ground products available in the grocery).

Also, I am hoping to find a butcher who carries fresh lamb, veal and pork that is, perhaps, from local farmers and not the standard stuff available in grocery stores.

I live in DC near SSpring but am willing to drive anywhere from Baltimore to as far as Stafford county for the right butcher.

Winter is coming and I like to cook comfort foods that require these cuts. If you know of a great butcher shop, please post.

Fair Warning - It's very helpful if you speak spanish. Some translations:
Beef = carne
Pork = puerco
Veal = ternero
Lamb = cordero
ground = molido

You can also try getting stuff from a CSA or organic farm. I've been buying a 1/4 calf from a farm in Marlboro MD for some time now, although there isn't any griding done, but you get the cuts and stuff and its great tasting. Maybe you should just get the cuts and grind it yourself (if it doesn't cost too much) or just take it to a butcher like someone already mentioned.

Just get a gun and butchers knife and kill your own.
