i remember those games.... i dont remember who had the most complicated moves... i got bored with it cuz it was too slow paced when you didnt know the moves, i prefered Killer Instinct over MK
Many purists (me included) consider Mortal Kombat II the high water mark of the franchise. With that in mind I’d have to say that I was always partial to Liu Kang’s fatality of turning in to a dragon and biting your opponent’s character in half. It was kinda hard to pull off but not impossible.
MK really isn’t remembered for its depth of combos like its contemporary Street Fighter II is but I liked some of the two-in-ones of MK 2 and the throws always looked appropriately horrific and painful.
As for favorite character to use, mine was Shang Tsung as he opened up every other characters move set to demonstrate ones complete mastery of the game.
If you want an old school 16 bit fighter with tons of combos and difficult to perform fatalities I suggest the forgotten classic Weaponlord. The SNES or Genesis cartridge may be difficult to find nowadays but I’m sure you can get it on MAME.

Killer Instinct is probably my second favorite fighting game after Soul Calibur 3...ahhh the good times with all those combos
my favorite fighting game of all time would have to be Marvel Vs Capcom 2, followed closely by DOA2 just because both are more fast paced than other games
