Help! I'm making lentil loaf for Thanksgiving, but our friends, one of which is allergic to eggs, is coming to dinner. Can I just use egg replacer? It calls for two eggs, which are used as a binder.

Does anyone have any experience with this? Any input would be helpful--I won't have time to try it out before the big day!

I don't have any personal experience, but found this page which says that options include corn starch, arrowroot starch and potato starch, among others.

I would think any of those would be acceptable, and wouldn't add any unusual taste to the loaf.

Wow! What a great link! Thanks so much. With my son's new friend, I am having to totally rethink how I cook. This should also help with the pumpkin pie. I make an awesome one with tofu, but soy is out for her to.
