Been there, done that! I bought a house here, sold a house and packed up one and unpacked the other in the space of about 6 weeks!! I am still going through boxes a year later, LOL!!

You'll like Austin, I think. I get down there every so often, as my sister lives south of Austin, between Austin and San Marcos. It's beautiful country. I just try to visit only in the winter!

Ironically, I'm not crazy about peach pie but I love peach cobbler. Especially my recipe.

Blueskies49 Texas Peach Cobbler

1/2 cup butter (1 stick)
1 cup flour
1 cup sugar
1/8 teaspoon salt
1/2 teaspoon cinnamon
1 cup milk
1/2 teaspoon vanilla
2-15 oz. cans sliced peaches in light syrup, drained; or peeled and sliced fresh peaches and their juices

Preheat oven to 350 degrees.

Put the butter in a 9 x 13 baking dish in the preheating oven. In the meantime, in a separate bowl mix together the flour, sugar, salt and cinnamon. Stir in milk and vanilla. Batter will be thin. Remove pan from the oven and pour the batter into the melted butter; do not stir. Lay peaches on top of the batter.

Cover pan with foil and bake for 15 minutes (keeps batter from bubbling over); remove foil and continue baking for an additional 20-30 minutes or until cobbler is a very light, golden color. It will have a pudding-like consistency.

Serves 10-12.

There are different versions, of course, and mine is based on the thin batter variety. My favorite that is similar to this is from a hole in the wall bbq joint in Irving.

If you haven't been already, TexasGirl, there are some yummy peach festivals in the summer. I've been to the one held in Weatherford, west of Fort Worth but Stonewall and Fredericksburg have an excellent one, I'm told. I'm sure bellestar knows of them, too.

Blueskies49, you ROCK! I am going to make this when peaches come into season! Hopefully I will be living in Texas by then! No I have never been to one of the peach festivals! I can't wait to move down and attend all these great festivals!

I voted Pecan. Does anyone have a good recipe for it? I think there is one that uses dark Karo syrup, but I can't seem to find it.

I voted for Pecan (especially love w/scoop of ice cream, best w/Blue Bell Homemade Vanilla....YUMMMM!) and I usually only make it at Thanksgiving time (I grew up w/Pecan Pie at Tgiving!!)...so I'm really looking forward to making it soon! Love Pumpkin too though...oh, and Peach, Apple, Key Lime, Buttermilk....oh gosh, the list goes on...!!!!! Love pie (except mincemeat...yuck and rhubarb...double yuck!)....I'm a dessert freak!!!
