Default Pecan Pie The Way It Should Be

The best pecan pie I've ever had has come from Collin Street Bakery in Corsicana. They still do it better -- and differently --- than anyone else. It's a caramel-based texture, and it fits the taste of a Texas pecan perfectly and more so than any filling I've had.

Hey Case? You stole my thunder here, ol buddy! Heretofore, I was the "poll feller". Yet...with this 'un of yours, you wiped me plumb out (no pun intended)!

Reminds me of that "single frame" comedy piece that used to appear in certain Texas publications and on calenders (was it called the "Back 40"???) which featured some cowpokes and good Lone Star humor. The one that metaphorically applies here is where one is whuppin' up on another, and the guy on the bottom is hollerin' out something like: "Hey, somebody pull this feller offa me 'fore he ruins my reputation of bein' the toughest man in town" LOL

Seriously, GREAT thread topic!

After a bit of serious thought, I went with apple. BUT...with the qualification that pecan is the undisputed "sentimental favorite". It is the one probably most associated with Texas...and definitely the one most prominently featured at family reunions and "dinner-on-the grounds"

Well, yeah...that is why I went with apple. BUT...I still feel a bit disloyal for not picking Pecan! As I say though, it is and always will be the sentimental favorite!
