How about that guy Bill Belichick? He has a better regular season winning % than both Walsh and Parcells, better postseason winning % than both Walsh and Parcells, more Championship wins and Super Bowl wins than both Walsh and Parcells. Not including the one he will win this Sunday.
You forgot to mention more wins then the coach the Lombardi trophy was named after. They will rename it the Belichick Trophy.

as a former volleyball player - I'll throw in something from left field:
Al Scates.
I think he holds (or is tied) the record for the most NCAA Div I championships with UCLA (19). Yes, volleyball isn't exactly the most popular sport.. and his feat may be a bit less dramatic as volleyball is pretty much a west coast sport. But numbers don't lie.

Herb Brooks - you have to get some credit for taking a group of college kids and beating what is considered one the best trained hockey teams on the planet at the time.
NBA Basketball- Larry Brown, he won everywhere he went with no big name super stars. He even took a very mediocre Philly team to the finals, other than Iverson, I can't name anyone else on that team.
Agree wholeheartedly about Larry Brown. He is great. I really thought he would win while in Indiana.
NHL - Al Arbour - Four straight Cups!
NBA again - I can't say that I love either guy, but you gotta respect Greg Popovich and Jerry Sloan
