Did you know that if not cooked until soggy, cauliflower can also be a sub for pasta in red sauce?
Using it instead of potatoes (with lots of onion) also makes a good "potato" pancake. ( Can sneak in just a little potato for "glue" if you want)
That's when you're really, really serious about cutting calories.
Oh, and works instead of rice, too.

My favorite is buffalo cauliflower, where you brown the florets and then coat them in Hooters sauce. Oh, and cauliflower tots.

Yeah, trying to figure out ways to get some quick easy meals going. I'm really trying to get away from pre-made food or fast food. I've got to try and eat a bit better, I figure as long as it's home made you have a head start, you don't know what's in pre made food these days. Since my high BP diagnosis and my blood work came back with blood sugar that is at pre-diabetics levels I really need to get this stuff under control.

The sodium in pre-packaged food is outrageous!

Yeah, I think we did the cauliflower rice one time. I checked out a few low carb sites that had some good ideas about stuff. I've said before I'm not really doing low carb per se, but just cutting back on the obvious carbs that spike your blood sugar, the white stuff basically, pasta, rice, sugar, potatoes, white breads, things along those lines.

Tonight we're going to do up a bean, veggies and chicken salad type thing with a lime vinaigrette, we're still sweltering here with the heat so we're trying to limit the oven/stove usage a bit.

I probably should take my food talk over to the food forum. LOL.
