You should ALWAYS protect your best interests. I've also been there done that... and then been screwed over when one of my best buddies started sleeping with my GF. There should always be boundaries. Sometimes you have to create them for others...

How would deleting your facebook account solve the issue of your friends & SO becoming facebook friends.
You'd just really be out of the loop.

I think it's natural for your friends to become friends with your SO over time. I'd be put off if the first time my friend met my SO they FB friended each other or exchanged numbers, but after a few meetings...so what? I even have the phone number of my best friend's boyfriend...gasp. I don't call or text him ever, but I like having his number in case I need to get in touch with my friend and she doesn't answer her phone. Big deal. I trust my friends 100% or they wouldn't be my friends.

I don't add people I am just dating to my Facebook. It would have to get to the relationship status or close to even consider it. I have a few ex's on my FB though.

Why do people even add romantic interests to fb? That's a great way to start drama.

Even men I've dated exclusively I don't add. Opens up a can of worms, IMO.
