Vicki, to be honest, I haven't been to Kanki in about 4-5 years but IIRC, Kanki seemed pricey. I've been to Fujisan's a few times for lunch and the price seems pretty reasonable. Their menus are on the websites I linked.
I've been to Ginza twice and I found their food a bit overseasoned both times, but I suppose I could have made a request for them to go lighter on the salt.
Kanki has early bird specials during the week. We headed there one weeknight around 4ish with our 2 year old son. Dinner was about $13 and it was excellent for the the little one, as the place wasn't crowded. We went to the one at Crabtree Valley Mall.
We have been to Ginza 4 times. 3 out of 4 were great. Last time the shrimp...which are our favorite....were a little funky tasting...like not fresh. My kids LOVE these places and Ginza puts on a good show. I went to Kanki in Crabtree and I thought it was dirty and the food was not very good...haven't been back.
I enjoyed Fujisan at Brier Creek much more than Ginza in Cary. The food was better in my opinion (less salt; by far) I also thought the experience overall was much better, at Ginza our cook (sorry I don't know the true term) was pretty lame! haha
