Recipe of the Day: Cherries Jubilee(From AR) This is an easy and impressive dessert
1/2 cup white sugar
2 tablespoons cornstarch
1/4 cup cold water
1/4 cup orange juice
1 pound Bing or other dark, sweet cherries, rinsed and pitted (or use frozen pitted cherries)
1/2 teaspoon finely grated orange zest
1/4 teaspoon cherry extract
1/4 cup brandy
3 cups vanilla bean ice cream
Whisk together the sugar and cornstarch in a wide saucepan. Stir in the water and orange juice; bring to a boil over medium-high heat, whisking until thickened. Stir in the cherries and orange zest, return to a boil, then reduce heat, and simmer for 10 minutes. While the cherries are cooking, spoon the ice cream into serving bowls.
Remove the cherries from the heat, and stir in the cherry extract. Pour in the brandy, and ignite with a long lighter. Gently shake the pan until the blue flame has extinguished itself. Spoon the cherries over the bowls of ice cream.

What was it and how was it? That I recall, deer, rabbit, raccoon, duck, quail, dove, pheasant, alligator (at a Florida restaurant), and lots of fish (crappie, trout, bass and many species I have forgotten). I've even eaten roasted kangaroo rat a couple of times while doing field work.
How was it? The raccoon was cooked over a backyard BBQ pit and was as tough as a boot. The rest were all great. One year I made deer jerky but only got to eat very little of it because everyone else ate it.

Did you ever have a pet rabbit? Our family had a pet rabbit who was an indoor pet. Visitors always were surprised to see a rabbit hopping around the house. I also had a pet rabbit, McPhee, at school. Kids read to him, others came to sit by his cage when they were upset. Once he got out at night and set off the alarms and the custodians told me the police came. I don't think they ever knew they were on a wabbit hunt.
