My typical list includes the following:

- Drive up to North Shore - stop at Turtle Beach, Waimea, surfing beaches, etc
- Lunch at Stortos (North Shore or Waialae)
- Leonard's for malasadas
- Chun Wah Kam Noodle Factory for manapua
- Shave ice at Waiola on Kapahulu
- Iolani Palace
- Mai Tai sunset cruise off Waikiki
- Sandy's for body surfing
- For more extreme things - skydiving or shark cage diving off North Shore
- Swap meet
If you are a photo-taking-nut, explore Chinatown, during the DAYLIGHT hours (not night). Pop into stores and shops for interesting photo shots, and check out the street-side vegetable displays. Some of my favorite photos that I've taken have been in Chinatown.
I agree with the recommendation... many of my favorite and most colorful photos have been taken in Chinatowns all over the map. But I'd add this... please be respectful of the feelings of the shopkeepers. While many are fine with being photographed, a few find it intrusive. So while that colorful old gent in the traditional herbal medicine shop may seem to make the perfect snapshot, if he scowls when he sees your camera, be prepared to just smile and wave and turn away instead.

Valid point. I always ask the shopkeeper if it is OK to take photos. And I'll sometimes ask if they would mind me taking a picture of them inside their shop. When approaching them with respect, I've never been refused, and have some great pictures. (And be forewarned that you might be welcomed, but that a "smile" does not always come with the pose, which is OK.)
Make sure you see the Byodo-In Temple.....a beautiful Japanese temple a fairly short drive from Honolulu. I didn't find it until my third visit. Amazing! Beautiful temple and grounds......it sums up the word zen!
If you are interested and able, You must snorkel Shark's Cove. It is a rocky entrance without any facilities, but it is like swimming in an aquarium.
