Watkins Glenn State Park - great hiking, gorge trail, waterfalls, awesome views. Also near race track if your into that. The camp sites are spacious, clean and have huge playgrounds for kids.

I second this one. It's off the grid. Very quiet and gorgeous.

Cranberry Lake in the Adirondacks is beautiful and not too far off the main road (rt 3) either. It has a gorgeous lake with loons and a sandy beach area.

My fav is Golden Beach which is a state campground on Raquette Lake. It's close to Old Forge and Blue Mountain so you could go check out other towns since there's not much to Raquette. Camping when it's raining isn't always tons of fun. There's a theatre in Old Forge so one could go to the movies if it's miserable outside. There's also a museum in Blue Mountain.

Letchworth State Park, hands down.

Campground Details - LETCHWORTH STATE PARK, NY - New York State Parks

If it had filled with water, it might have been another Finger Lake. As it is, it is fabulous for hiking -- the Gorge has 3 huge waterfalls to hike to. The place is huge.
